Glucose! And sugars!
Museo de Vida: Sugar Preservation
Fact Document
Questions:
Disaccharides: a group of sugars composed of two monosaccharide groups linked together through the loss of sugar.
Polysaccharides: complex carbohydrates composed of a bunch of monosaccharides combined through the loss of water molecules.
Glucose: It is found in plants and obsorbed directly into the blood stream when digested.
Fructose: A sweet tasting molecule often used in foods because of it relative cheapness.
Sucrose: Table sugar, Cane sugar ETC
Lactose: An enzyme that helps break down dairy.
Sodium cyclamate: 30 - 50 times stronger than sugar (depending on concentration.) Has a bad aftertaste.
Aspartame: Has been the target for many health disputes, some people say it’s horrible for your body. Others think it is just fine.

Questions:
- What is sugar?
- What is the chemical formula for glucose?
- What aspects of the glucose molecule contribute to taste?
- How was / is sugar used in the medical field?
- What is a monosaccharide? Disaccharide? Polysaccharide?
Disaccharides: a group of sugars composed of two monosaccharide groups linked together through the loss of sugar.
Polysaccharides: complex carbohydrates composed of a bunch of monosaccharides combined through the loss of water molecules.
- What is the difference between glucose, fructose, sucrose and lactose? What are they found in? What are their chemical formulas? What do their molecules look like (you can either draw each one, or describe them in words)?

- What is an isomer?
- What does the body use glucose for? What happens to the human body if glucose levels are off?
- What other compounds are “sweet” but are unfit for human consumption? Why?
Ethylene Glycol. It is dangerous because it is used in antifreeze for cars, I'm sure you get the picture.
- List the artificial sweeteners discussed in the reading. Tell me a bit about each.
